Hey there fellow (or future) winemaker!

Here's an important note about safety:

The process of turning juice (or any other beverage) into wine, cider, mead (or anything alcoholic) involves alcoholic fermentation. This is a process that – while running – creates carbon dioxide gas. 

You don't want to have this process occur inside a sealed container. Here's why: if you ferment inside a sealed container, pressure will build up. If pressure builds up, a container can break.

That's why we say to NEVER tighten the lid of a glass gallon jug while you think there could ever be an active fermentation inside. Instead, we use an airlock (included in every Brewsy starter kit) filled with water. This allows gas to escape, but doesn't let anything in.

The following statement applies to carboys (glass gallon jugs) and other sealed containers holding actively fermenting wine, cider, mead, or other alcoholic beverages:

CAUTION: Contents under pressure. Do not break or incinerate. Do not store at temperature above 120°F. Keep out of reach of children. Flammable. Keep away from fire or flame.
