For one reason or another, be it health or general preference, there comes a time when we might need to stick to sugar-free wine. Although one does need sugar for the fermentation, the secret is to let the yeast eat all the sugar until it is bone dry. This way we are left with a wine that contains no sugar whatsoever. But how do we achieve this?

 

The first step is to make sure that the grapes are as ripe as can be. This means that they should be dark and almost mushy. If they are not ripe enough, the yeast will not be able to eat all the sugar and the wine will be sweet.

 

Next, we need to add yeast to the grape must (the unfermented juice of the grapes). We want to use a lot of yeast, more than what is normally used for fermentation, because we want the yeast to eat all the sugar. This process can take up to two weeks.

 

Once the fermentation is complete, we will need to stabilize the wine. This is done by adding sulfur dioxide, which will kill the yeast. At this point, the wine is ready to be bottled. And there you have it: a sugar-free wine that you can enjoy without any guilt!
